In less than 3 weeks my nephew, Baby C will be one. I am trying to get as many cuddle time as I can before he starts running away from me. LOL.

Lemon Jello Cake (combination recipe from memory and online)

1 (3oz) package of lemon jello

2/3 cup hot water

2/3 cup oil

1 box of yellow or lemon cake mix

4 eggs

Preheat oven at 350 degrees.  Grease and flour bundt pan.  I used this mini bundt pan for the cakes in the pictures.  Dissolve jello in the hot water.  Mix the oil, cake mix, and eggs.  Add dissolved jello.  If using a regular size bundt pan bake for 40-45 minutes.  For the mini bundt pans I baked them using a convection oven at 350 degrees for 12-15 minutes.  I always check the cake using this method.

Glaze

1½ cups powdered sugar

¼ cup lemon juice

Gradually add lemon juice to the sugar while mixing with a fork.  Taste before adding all of the lemon juice.

Poke the cake with a toothpick or skewer while cooling and drizzle with the glaze.

In our home we don’t celebrate Valentine’s Day on 02/14.  We don’t believe in telling your loved one that you love them once a year BUT people at work do.  So, for my coworkers I made Marshmallow Puffs.  I doubled the recipe and it made 75 marshmallow puffs.  Tags from here.

 

Jambalaya

My obsession with Jambalaya started last year with a can of soup and then a few months ago it moved on to jambalaya from Safeway Signature Soups.  Finally last Saturday I decided to make my very own after my food photography class with a fabulous food photographer, Clare Barboza.  I was so inspired by the class that I wanted to make something I have never tried before so I can photograph it.  LOL.  Why something new?  Because I don’t think Filipino foods are pretty and I was not sure how I’m going to make chicken adobo look pretty.
I was browsing the food photos on flickr when I came across a photo I recognized.  It was from another class attendee and I found a Jambalaya recipe on her blog that looked simple enough for a beginner like me.  Lo and behold, according to the V Man “This is the best thing you have ever made!”.  I guess that means I can make it again!
